A three piece set consisting of my 8” pattern chef knife, a boning knife and a paring knife, all in golden Vermont flame maple.

8” chef’s knife with a stabilized curly and figured Olivewood handle. This is the mosts stunning olivewood I’ve ever seen, and was happy to have stumbled across a small stash of it. Truly beautiful figure, with feather!

This is my take on the classic 8” chef’s knife with a stabilized Goncalo Alves handle. This is one of my all-time favorite woods. There are tones of rich Mahogany, interspersed with creamy lighter streaks. Understated, but elegant. This model is made of Bohler-Uddenholm AEB-L stainless steel, a fine grain steel intended for use in razor blades. .098” thick stock, with a full distal taper to the blade, and an edge ground to .004” (just slightly thicker than a human hair) before being sharpened.

Another PLB, with a stabilized figured Tzalam handle. This wood was a sleeper - I knew the raw wood had decent figure and tone, but it wasn’t until I finished it completely that it’s beauty was revealed, and WOW what a stunner! Almost the perfect cross between the light chocolate tones I expect from Black Walnut, but with tangerine and red tones and highlights in the curl that’s quite reminiscent of Koa. Perhaps one of the most beautiful woods I’ve ever used.

An interpretation of what a standard petty knife and a Japanese honesuki boning knife would be like if melded together, in AEB-L stainless steel. Stabilized Afzelia burl and Ebony handle.

A trio of paring knives, made of 1095 high carbon steel, the blades have full distal tapers and end in a perfect needle point, and are ground VERY thin - to .002” behind the edge - so they’ll slice like laser beams, and still allow the edge to be easy to maintain.

This is my “PLB” model 8” chef’s knife, named for my Pudgy Lil’ Buddy who insists more knuckle clearance is necessary than my standard pattern provides, in AEB-L stainless steel. Virtually identical to the standard pattern, but with a slightly more canted handle and an additional 3/8” at the heel. Stabilized Thuya burl handle.
